This momentous occasion celebrates the release of our collaboration beer with Hair of the Dog Brewing Company. The first beer brewed in our Conflux Series, Collage is comprised of four very distinctive brews &#8211; The Dissident, The Stoic, Fred &#038; Adam &#8211; each 100% aged in a myriad of barrels ranging from Rye Whiskey, Cognac, &#038; Sherry to Pinot Noir, Bourbon and American Oak. </p>
<p>During this beer dinner, meet owners Gary Fish of Deschutes Brewery and Alan Sprints of Hair of the Dog Brewery. You will also get to ask your toughest brewing questions to Deschutes Brewmaster, Cam O&#8217;Connor, and walk away with a better knowledge of how this beer was made and conceived. </p>
<p>An exquisite menu has been created by Chef Katrina &#038; Chef Jeff from Deschutes Brewery to delight your taste buds and to pair perfectly with these &#8220;component&#8221; beers that make up Collage. We hope you can join us for this once-in-a-lifetime event that will have you talking for the rest of the year! </p>

<p>Cocoa Braised Ox Tail &#8211; morel mushroom flan, radish greens<br />
Paired with Adam (100% aged in a New Oregon barrel from Francois Freres)</p>

During this beer dinner, meet owners Gary Fish of Deschutes Brewery and Alan Sprints of Hair of the Dog Brewery, while enjoying an exquisite menu has been created by Chef Katrina &#038; Chef Jeff from Deschutes Brewery to bring out the perfection in each of the four signature “component” beers. Imagine Deschutes Brewery’s hard-to-find Reserve beer, The Dissident, matched up with poached crab legs and Hair of the Dog’s Adam perfectly paired with smoked beef rib-eye. That’s just a little of what this spectacular evening entails. Of course, it will also be a rare chance to partake of the new Collage, which will have an extremely limited release. A portion of the proceeds will be donated to NeighborImpact of Central Oregon.</p>

Featuring Grain and Gristle chef Nathaniel Price. The four main beers being paired are the new Supercool IPA, 2011 Provision, Fantasia, and the Seven, all of which are being served with individual courses including Moroccan beef sausage and smoked pork belly. To open and close the dinner, special beer and vermouth cocktails using an in progress Berliner weisse and the upcoming 2012 Late Harvest will be made by pulling beer directly from the barrels.  </p>
